Kitchayanan Chomsanook, widely celebrated in the industry as "Daeng Dulaper," the visionary founder of the Namura coffee brand. Driven by the philosophy of "Coffee for the Community and the Environment," he has completely transformed the livelihoods of villagers in Dulaper (Mae La Noi, Mae Hong Son).
Daeng stepped in to educate farmers on every single step of the coffee journey—from meticulous cultivation to the final purchase of their harvest. By creating sustainable jobs and steady income, he successfully elevated Dulaper coffee to national fame. Grown at altitudes exceeding 1,350 meters above sea level, the farmers' exceptional dedication from hand-picking cherries to processing was proven when they secured 1st Place at the Thai Specialty Coffee Awards 2020 (Honey Process).
Innovative Yet Accessible Fermentation
To enhance the coffee's flavor profile and value without overly complicating the workflow for local farmers, Daeng introduced a highly effective, approachable fermentation method. By experimenting with a unique local fermentation culture known as Saleh-De, the results were remarkably satisfying, yielding distinct and vibrant aromas.
However, natural fermentation and open-air drying without climate control mean that weather plays a huge role in the coffee's consistency. Daeng tackles this challenge with a practical mindset:
"We can only get as close to perfection as nature allows. There are so many variables—from annual rainfall and soil nutrients to the pruning of the trees. Honestly, it is fascinating to see the unique character each year brings. While we can't control the weather, we strictly control what we can: preventing defects by carefully managing rain exposure, moisture levels, and fermentation times." — Daeng Dulaper
Transforming the Mountain Community
Elevating coffee from the remote peaks of Mae Hong Son was no small feat, but today, Dulaper coffee is highly sought after by specialty coffee lovers. The significant increase in the beans' value has drastically improved the quality of life for the local farmers. His monumental success in developing this community is exactly how he earned the legendary moniker, "Daeng Dulaper."
