Renowned for his scientific and biochemical approach to coffee processing, Eak categorizes his methods at The First Valley into two distinct styles:

 

- Traditional Process: Focusing primarily on Dry and Honey processes. However, Eak strictly controls all environmental factors to achieve the desired aromas and flavors while carefully preserving the beans' nutritional value.

- Unique Process (Bioprocessing): The true signature of The First Valley. By seamlessly blending traditional methods with advanced biochemistry and deep fermentation techniques, this process produces extraordinarily clear and distinct flavor profiles.

 

This innovative approach birthed the exclusive "Jewel Series," featuring the universally acclaimed masterpiece: Moonstone.

A Pristine Origin in Chiang Mai

 

Beyond expert processing, the origin of the beans is what makes this coffee truly exceptional. The First Valley Coffee Estate is nestled in the lush, complex mountain ranges of Mae Ton Luang (Thep Sadet, Doi Saket, Chiang Mai)—one of Thailand’s most renowned coffee-growing regions.

 

Recognizing the area's rich organic soil, pristine water sources, and cool year-round climate, Eak acquired the land in 2012. He transformed it into a café, a homestay, and a comprehensive coffee academy. Today, it serves as an educational hub for everything from cultivation and harvesting to processing and brewing, relentlessly researching and pushing Thai beans further into the Specialty Coffee market.
