
Chatchai Kaboo is a dedicated farmer from the Royal Initiative Border Village Project under HM Queen Sirikit in Doi Phak Kut (Pai District, Mae Hong Son). Tucked away in a remote border region, his farm is nestled within a pristine watershed forest. Situated in a valley over 1,500 meters above sea level, the estate enjoys high humidity and a cool climate year-round, yielding a coffee profile that is exceptionally clean and remarkably distinct.
Biodiversity and Shade-Grown Excellence
Across his sprawling 30–40 rai estate (with 16 rai officially registered), "Uncle Chatchai" cultivates around 5,000 coffee trees, featuring premium varietals such as Typica, Caturra, and Bourbon (both yellow and red cherries).
Committed to the government's watershed conservation policies, his coffee is strictly shade-grown. To further enrich the ecosystem, he co-plants economic crops like avocados and macadamias. This lush, biodiverse canopy provides the perfect natural environment to elevate the quality of his coffee to the highest level.
The Full Moon Harvest & Award-Winning Craft
After mastering his cultivation and processing techniques, he proudly launched his brand: Doi Phak Kut Coffee. In his very first competition at the Thai Coffee Excellence 2021, he astonishingly secured 1st Place.
His secret? A flawless blend of meticulous processing and ancient wisdom. He harvests his cherries exactly during the full moon of March (the 3rd lunar month), a time traditionally believed to unlock the absolute peak of the coffee's flavor.
Uncle Chatchai continues to refine his craft, consistently achieving cupping scores above 85 in national competitions. He firmly believes that even with the perfect terroir, true excellence is impossible without relentless dedication. It is this unwavering passion that makes his coffee a highly sought-after treasure nationwide—fittingly dubbed by him as the "White Elephant," a rare and precious masterpiece of Thai coffee.
